Italian White Bean Hummus


I love eating healthy but often find myself with little time to spend in the afternoon to actually make something. This is one of those recipes that you can make on a Sunday evening and have at the ready during the week for a quick sandwich, salad topping, or veggie dip when you walk by the fridge. I'm the kind of cook that throws ingredients in without exact measurements.  I always modify recipes to suit my family's taste and you should do the same. Add an extra pinch of this and leave that second clove of garlic out if you are so inclined.

What you need:

  • 1 can cannelloni beans. I prefer Bioitalia brand.
  • Some good organic extra virgin olive oil
  • 2 cloves of garlic
  • Half a lemon
  • Sneaky Greens Pizza My Heart
  • Sneaky Greens Kale Salt
  • Your favorite whole grain pita bread, crackers, or vegetables. Or maybe all three. Let your hair down and live a little.
  • A handy dandy food processor 

Drain the beans and add the whole can to your food processor. Add the juice from the lemon, the two garlic cloves, 1 tbsp. olive oil, a dash of kale salt, and a tbsp. Pizza My Heart. When you have everything in the food processor, give it a good whirl until the right consistency is reached.  I usually keep it spinning for 20 seconds or so. Do the ole' tried and true "stick your finger in after you are completely sure no blades are still spinning" taste test. If you think it is missing anything, now is the time to add. Spoon mixture into your favorite serving bowl and top with a few more shakes of Pizza My Heart and garnish with a fresh sprig of whatever fancy schmancy herb you have growing in your backyard. Voilá. Quick, easy, nutritious, and (if you can get past the garlic breath) absolutely delicious.
